Depending on the part of the “baking day,” the machine can be used as device serving multiple functions (from cooling, proofing, and storing, to re-cooling or freezing).

We make 9-, 12-, 15-, 18-, 21-, 24-, and 26-rack chambers and bigger if required. We are able to adapt existing space for holding/proofing.

FEATURES

Expansion walls are responsible for even air distribution and circulation in whole chamber between racks and boards – it eliminates the risk of crusting.

Special system for joining walls and floors (locks) guarantees better security measures against humidity ingress. Lighting – high-end LED panels. Custom tailored to our needs industrial evaporator, powered by electronic expansion valve, unifies the cooling/proofing process.

Touch panel allows you to define up to 6 steps of each stage and to recall them at any given moment.

PROOFING CHAMBERS

We can construct devices in many different configurations.

Two independent chambers with separate cooling and control systems joined by a partition wall with sliding door.

The walls are made of stainless steel from the inside, and on the outside in stainless steel housing as well but with a pattern. Door and doorframes, foot bars and the other parts are made of stainless steel as well. In each chamber, there are two coolers, two expansion walls along longer sides, LED lighting, floor made the same as the walls with an additional 2mm-thick stainless steel flooring.

CHAMBER SPLIT INTO 4 DIFFERENT SIZE ROOMS

The walls are made of stainless steel from the inside, and on the outside in stainless steel housing as well but with a pattern. Door and doorframes, foot bars and the other parts are made of stainless steel as well. In each chamber, there are two coolers, two expansion walls along longer sides, LED lighting, floor made the same as the walls with an additional 2mm-thick stainless steel flooring. The door frame is heated to prevent gasket freezing.

ROOM 1

Playing the role of cooling chamber for product storage. There is a suspended ceiling and two expansion walls enabling the storage of, e.g. confectionery without the drying effect. Even air circulation with variable adjustment and the use of steam generator helps keeping required conditions (temperature, humidity, cooling intensity, or air flow) inside the room
